Why can't I access my device or file sharing from iTunes in macOS Catalina?

If you've recently updated to macOS Catalina there have been changes in how you access File Sharing in macOS. iTunes has now been separated into different apps. The File Sharing feature is now part of Finder which makes things a little easier, but does mean that we need to create set another video!

To access file sharing, connect your device to your Mac with the cable and then open a Finder window. You'll see your iPad appear as a device on the left sidebar just like if you had connected an external hard drive. You can click on that device and see the standard synchronization screen. One option is not File Sharing where you can move files to different apps similar to how this was done in iTunes previously.
